Coconut tahini fish recipe

Here is an easy to make recipe of a fish.. You can make this recipe with any white fillets but I use Basa fillets.

I try to eat fish as often as possible. It´s on the table at least two days of the week. Fish seems to be pretty expensive here in Australia, compared to Iceland. First I bought the fish from a special fish-market but now I just buy it from Coles, Basa fillets are very good frozen.. Easy to take out from the freezer couple of hours before dinner. I like to cook it with coconut-cream and curry! Here is a favorite recipe..

400 gr. Basa fillets (thawed)

1 Brown onion

3 Cloves of garlic

3 cm Fresh ginger

3 tablespoons Lime juice

2-3 Tablespoons Mango chutney

400 ml Coconut cream

2 Tablespoons Tahini

2 Teaspoons Curry powder

1 Teaspoon Cayanne pepper (I like it hot)

1 Teaspoon Coconut oil

6-7 Basil leaves

10-15 Unsalted peanuts

Salt + pepper

Cut the fish fillets to pieces, spread salt and pepper over and half of the curry powder. Heat a frying pan, place the coconut oil and the fish. Cook the fish until tender. Replace the fish with the onion, garlic, ginger, rest of the curry powder and cayanne pepper, cook till the onion is soft. Add the lime juice, coconut cream, tahini, chutney. Bring to boil and mix the fish in with the basil leaves, salt and pepper. Add the peanuts on top..

Enjoy with rice and salad!
