Walnut Date Muffins

I baked those today, so good and healthy too!! I found this recipe from here but I changed it a bit..

3/4 cup whole-wheat flour, spooned and leveled

3/4 cup Spelt flour, spooned and leveled

1/3 cup packed light-brown sugar

3/4 teaspoon ginger powder

3/4 teaspoon cinnamon

1 1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup milk

1/4 cup light (mild) molasses

6 tablespoons light olive, canola, or sunflower oil

2 large eggs

1 1cup walnuts, coarsely chopped

1 cup pitted dates, coarsely chopped

1/4 cup dark chocolate chopped

  1. Preheat oven to 195 degrees. Line up 14 standard muffin cups.  In a large bowl, whisk together the flours, brown sugar, ginger powder spice, cinnamon, baking soda, and salt.
  2. In a separate bowl combine milk, molasses, oil, and eggs; stir into dry ingredients, mixing just until moistened. Fold in walnuts, dates and chocolate.
  3. Divide batter evenly among muffin cups. Bake until a toothpick inserted in center of a muffin comes out clean, 20 to 23 minutes. Cool 5 minutes in pan, and then remove and cool to room temperature.

Enjoy with tea or coffee..
